  • 2 tbsp extra virgin olive oil

  • 1 yellow onion, chopped
  • 28 oz canned crushed tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil and sauté minced garlic and chopped onion until soft (about 3-5 minutes).
  2. Stir in crushed tomatoes, vegetable broth, oregano, salt, pepper, and uncooked spaghetti until well combined.
  3. Bring to a boil over high heat; then reduce heat to low-medium and cover tightly.
