- 1/4 cup brown sugar
- 1/4 cup kosher salt
- 1 tsp black pepper (freshly cracked)
- Zest of 1 lemon
- 1/2 cup smoker chips (alder or cherry wood)
Instructions
- Rinse the salmon under cold water and pat dry.
- In a bowl, mix brown sugar, kosher salt, black pepper, and lemon zest.
- Rub the mixture generously over the salmon fillet.
- Wrap the salmon in plastic wrap and refrigerate for at least 4 hours or overnight.
- Preheat your Traeger smoker to 180°F (82°C) and add smoker chips as per instructions.
- Place the brined salmon skin-side down on the grill grates.
- Smoke for 1-2 hours until it reaches an internal temperature of 145°F (63°C).
- Let it rest for 10 minutes before slicing.
