  • 2 pounds starchy potatoes (Russets or Yukon Golds)
  • 2 large sweet onions
  • 1 cup heavy cream
  • 1½ cups Gruyère cheese (shredded)
  • 3 tablespoons unsalted butter
  • Fresh thyme (or dried)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet, melt butter over medium heat. Add sliced onions and sauté until golden brown, about 15-20 minutes.
  3. Thinly slice the potatoes (about 1/8 inch thick) while the onions cook.
  4. Layer half of the potatoes in the baking dish, followed by half of the sautéed onions, then season with salt and pepper.
  5. In a bowl, whisk together heavy cream and thyme. Pour half over the potatoes and onions.
  6. Repeat layering with remaining ingredients, finishing with cheese on top.
  7. Cover with foil and bake for 45 minutes. Remove foil after 30 minutes to allow cheese to bubble and brown.
  8. Let cool slightly before serving.
