  • 3 lbs chuck roast
  • 1/2 cup pure honey
  • 4 chipotle peppers in adobo sauce
  • 2 tsp ground cumin
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 8 soft corn tortillas
  • Fresh cilantro, diced onions, and lime for topping

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat oil in a large skillet over medium-high heat. Sear the chuck roast for 3-4 minutes on each side until browned.
  3. Blend honey, chipotle peppers, cumin, garlic powder, onion powder, and a pinch of salt until smooth.
  4. Place the seared beef in a slow cooker or Dutch oven and pour the sauce over it.
  5. Cover and cook on low for 8 hours or high for 4 hours until easily shredded with two forks.
