- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup shredded sharp cheddar cheese
- 2 tsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste

Instructions
- Preheat the oven to 375°F (190°C). Cut tops off the bell peppers and remove seeds.
- In a skillet over medium heat, heat olive oil and sauté onions until translucent, about 5 minutes.
- Add ground beef or turkey along with cumin, paprika, salt, and pepper. Cook until browned.
- Stir in cooked rice and drained diced tomatoes; simmer for an additional 5 minutes.
- Stuff each bell pepper with the filling until slightly overflowing. Place upright in a baking dish.
- Cover with aluminum foil and bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until cheese is bubbly.
