Ingredients

Scale
  • 1 lb lean ground beef
  • 1 cup long-grain white rice
  • 2 cups beef broth (low-sodium)
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 cup bell peppers, diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. In a large pot over medium heat, brown the ground beef, breaking it apart as it cooks.
  2. Add chopped onions and minced garlic; sauté until softened and fragrant.
  3. Stir in diced bell peppers; cook for another 3-4 minutes until slightly tender.
  4. Add uncooked rice, diced tomatoes, and beef broth to the pot. Season with salt, pepper, and paprika.
  5. Bring to a gentle boil, then reduce heat to low. Cover tightly and let simmer for about 20 minutes or until the rice is cooked through and liquid is absorbed.
  6. If desired, sprinkle cheddar cheese on top during the last few minutes of cooking until melted.
