Ingredients

  • 4 dried guajillo peppers
  • 2 medium yellow onions
  • 4 cloves garlic
  • 2 cups beef broth
  • 12 corn tortillas

Instructions

  1. Blend guajillo peppers, garlic, and onions until smooth. Mix with beef broth to create a marinade.
  2. Rub marinade over the chuck roast and refrigerate overnight.
  3. Preheat the smoker to 225°F (107°C) with your choice of wood chips.
  4. Smoke the marinated roast for about 6 hours or until it reaches an internal temperature of 200°F (93°C).
  5. Strain leftover marinade into a pot to create consommé for dipping.
  6. Warm corn tortillas on a skillet until charred; fill with shredded beef and top with cilantro and onions.
